Highly flavorful, the 2021 white Pouilly-Fuissé Les Vieilles Vignes displays remarkable precision and craftsmanship. Its very pure and fresh nose, with delicate floral notes, creates a sense of lightness, enhanced by an elegantly oaked touch. The palate is equally impressive: a well-balanced structure with good consistency, supported by tension and fine minerality. This bottle is already open and flourishing, yet it has the potential to age gracefully for another five to seven years. It pairs splendidly with local dishes like gougères with Comté cheese, sautéed frog legs, mushroom vol-au-vent, or salmon fillet with sorrel. A quintessential example of Pouilly-Fuissé!
